Lecithin belongs to a class of compounds known as phospholipids, which are involved in forming lipid bilayers of cell membranes in the body.
Phospholipids, such as lecithin, consist of two esterified fatty acids attached to a phosphate linkage. Lecithins are a major component of all cell membranes and are present in a variety of biological matters, including venous blood, bile, human brain tissue. Phospholipids, like lecithin, can also act as emulsifiers, enabling oils to form colloids in water.
