Nattokinase is an enzyme extracted from a Japanese food called nattÅ, which is produced from fermented soybeans. Natto is a popular dish in Japan, where it is often eaten with rice.
Nattokinase, profibrinolytic serine protease, was first extracted from natto in the mid-1980s by Chicago researcher Dr. Hiroyuki Sumi, who gave the dietary supplement its name. Nattokinase is promoted in the alternative medicine community as a blood thinner.
