Stevia extract comes from the Stevia rebaudiana plant, also known as candyleaf, sweetleaf, and sugarleaf. Stevia rebaudiana plants are native to Paraguay and Brazil, but individuals can cultivate the plants in any semi-humid location with well-draining soil. Stevia is a natural sweetener and zero-calorie sugar substitute. It owes its sweetness to its bioactive compounds, steviol glycosides.
The two most common steviol glycosides are rebaudioside A and stevioside. They are the primary ingredients in stevia sweeteners. Unlike regular sugar, steviol glycosides don’t trigger a glycemic response. Rebaudioside A is around 240 times sweeter than sugar in taste, while stevioside is about 140 times sweeter. The body can’t digest or absorb steviol glycosides, hence the lack of calories and glycemic response.
