Collagen is one of the many types of protein found in skin, bone, joints, muscles, and internal organs. It is necessary for the proper functioning of connective tissues. Several amino acids form collagen strands, including glycine, proline, and hydroxyproline. Applying heat to collagen causes it to break apart in a process known as denaturation. Gelatin is the byproduct of collagen denaturation, whereas hydrolyzed collagen is the result of hydrolysis.
